The best way to generate ideas in specific niches is to spend time in front of a keyword research tool like WordTracker, Market Samurai, or the Google AdWords Keyword Tool.

A couple of additional ways to find ideas for specific niches are to check your other sites for keywords that are being used to find the sites and the google auto suggest.

I've just been running the trial. To tell you the truth, the data seems pretty inaccurate. I prefer a mix of the Google AdWords Keyword Tool and SEODevGroup's NicheMarketFinder (both free).
