It's really difficult for a general site to start up. People don't seem to want to link to general sites. People want to link to "the" authoritative resource on any topic -- no matter how small.
Most of the "hot trends" keywords are in the "celebrity gossip" niche, so you could cover a lot of these with a gossip blog.
I have done several that worked that EXACT way...build authority in a niche and then broaden...I had never thought through that as a pattern, but I think you are spot on with it.
Folks are happy(er) to link to niche experts.
