It depends on the niche of the forums .. I personally like black
you can never go wrong with white. but i agree with helena. white on white is pretty boring, so try to mix it up with a color that you like.
I think green or white would be a suitable colour. Because if you think health, you think nature so green would be good, but I would consider the background being white and the actual images and background images being green.
Depends on the theme of the site, but try useing soft colours, relaxing for eyes.
For a health site, I would absolutely suggest either white, light blue/sky blue or light green. These colors are what I more often than not see on health niche web sites and they look actually first-class.
Is this because of the mental association with a medical aid box e.g. red box with a white cross on it? In this case, green is also common but has less "emergency" feeling I guess?red background behind a white content container.

Leave it white period. It is not easy on the eyes when you start putting dark colors for a site's background. One thing I find to use as a rule of thumb is to cut off the lights and view a site. If I am able to SEE things around me clearly then the color works, if not time to rethink your color scheme.
